The reason why I suggest 3 people is it will take less time to get the site ready to launch that way.
Finding one person who can do all 3 jobs well will be tough. Finding an opening in their schedule will be even tougher.

You made a very good point-- that I was inherently thinking.
If someone came to me claiming to be very-good (or better) in all three areas, I'd tell them they were full of crap. There's just no way to become a craftsman in all three areas. Reading Jay Abraham's "Mr. X" book doesn't make you a marketer nor does reading a few copywriting books and then writing a few web pages make you a copywriter.
