Ultimately it comes down to speed and convienence. Yes, I know how to make my own handwritten notes... but should I bother? I can pick something already made that fits my needs in about 60 seconds or less.
My billable time as a copywriter is significantly higher than what any of the commercial hand-drawn graphic note products are priced at.
Example: If it takes you 40 hours (including research) to write a sales letter from scratch and you charge $4K for the project, then you're making $100/hour.
I'd suggest outsourcing as much as you can.
Take tasks like audio editing. I know how to do it myself but why should I? I can easier outsource to someone who's even better at it then me and charges $20-25/hour. And while they're working on that, I can focus my time and energy on more profitable tasks.
By outsourcing as much as I can and focusing on maximizing my billable copywriting time, it has made a tremendous increase in my income every year.
